Have you seen the new Green Giant vegetable commercial?

They tell you that most vegetables loose 65% of their nutritional value 12 hours after they are picked. Now I am not sure this is correct but I am sure they loose some. But the commercial goes on to say that they freeze their vegetables within 6 hours of picking, holding in the nutritional value.
